Why we love it: Diego Lopez’ farm, Finca San Francisco, sits high in the Andean mountains, where the coffee cherries mature slowly in the cool temperatures and volcanic soil, giving this coffee a distinct terroir and layered complexity. The farm also utilizes sustainability techniques to both preserve soil quality, and conserve water during processing. We are currently serving this coffee as our house drip, and it excels in any filtered preparation.
